  • 6 slices thick-cut bacon
  • 3 tablespoons unsalted butter
  • 1 small yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 3 pounds russet potatoes, peeled and diced into 1-inch cubes
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (plus more to taste)
  • 1 cup heavy cream
  • Optional toppings: shredded cheddar cheese, chopped chives, extra crumbled bacon, sour cream

Instructions

  1. Cook the bacon: In a large skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain. Once cool, crumble into small pieces. Do not discard the bacon fat.
  2. Sauté the aromatics: Pour off all but 1 tablespoon of the bacon fat from the skillet. Add the 3 tablespoons of butter and melt over medium heat. Add the diced onion and cook until soft and translucent, about 4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Scrape up any browned bits from the bottom of the pan.
  3. Build the base: Transfer the onion and garlic mixture to your slow cooker. Add the diced potatoes, chicken broth, dried thyme, black pepper, and 1 teaspoon of salt. Stir everything together until the potatoes are mostly submerged.
  4. Slow cook: Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The potatoes should be fork-tender.
  5. Mash, don’t blend: Once the potatoes are tender, use a potato masher to gently mash the potatoes right in the slow cooker. Mash about half of them, leaving some chunks for texture. Do not use an immersion blender.
  6. Finish with cream: Stir in the heavy cream. Let the soup cook uncovered for another 10-15 minutes on LOW to thicken slightly. Taste and adjust salt and pepper.
  7. Serve: Ladle the soup into bowls and top with the crumbled bacon, shredded cheddar cheese, chopped chives, and a dollop of sour cream if desired.

Notes

Don’t over-mash the potatoes; use a hand masher and leave chunks. Add heavy cream at the end to prevent curdling. If soup is too thick, stir in extra broth or milk. If too thin, cook uncovered for 20-30 minutes. For best flavor, make a day ahead.
