A rich, fudgy banana bread made with browned butter and cream cheese for an incredibly creamy texture, topped with crunchy walnuts.

Ingredients

Scale
  • 1 stick (113g) unsalted butter
  • 8 oz (225g) full-fat block-style cream cheese, room temperature
  • 3 large ripe bananas (~1.5 cups mashed)
  • 3/4 cup (150g) granulated sugar
  • 1 cup (100g) walnuts, chopped
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. Melt butter in a medium saucepan over medium heat. Stir constantly until milk solids turn golden brown and it smells nutty (about 5 minutes). Remove from heat and let cool for 10 minutes.
  3. In a large bowl, mash bananas until smooth with a few small lumps.
  4. Whisk cream cheese into mashed bananas until smooth. Add cooled brown butter, sugar, and vanilla extract. Whisk vigorously until glossy and no lumps remain.
  5. In a separate medium bowl, whisk together flour, baking soda, and salt.
  6. Gently fold dry ingredients into wet ingredients using a spatula until just combined. Do not overmix.
  7. Fold in chopped walnuts, reserving a small handful for topping.
  8. Pour batter into prepared loaf pan. Smooth top and sprinkle reserved walnuts on top.
  9. Bake for 55-65 minutes until top is deep golden brown and a toothpick inserted in the center comes out with moist crumbs.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely (at least 1 hour) before slicing.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Do not overmix the batter to prevent a tough texture. Cool completely before slicing to allow the cream cheese to set. For a crunchy top, sprinkle coarse sugar before baking.
