A warm, spiced holiday punch made with simple ingredients like apple juice, orange, and aromatic spices. This non-alcoholic base is perfect for hosting or enjoying by the fire, offering a soul-soothing experience with minimal effort.

Ingredients

Scale
  • 64 ounces (half a gallon) 100% pure pressed apple juice
  • 1 large orange (for zest and juice)
  • 3 large cinnamon sticks
  • 1 teaspoon whole cloves
  • 2 pods star anise
  • 1-inch piece fresh ginger, peeled and sliced
  • 2 to 4 tablespoons brown sugar
  • 2 cups water

Instructions

  1. Wash the orange thoroughly. Using a zester, remove the peel in wide strips, avoiding the white pith. Cut the orange in half and squeeze out the juice (about 1/3 to 1/2 cup). Set juice and peel aside.
  2. Pour the apple juice and water into a large stockpot. Add the cinnamon sticks, whole cloves, star anise, and sliced fresh ginger. Stir gently to combine.
  3. Stir in the brown sugar. Adjust amount based on desired sweetness.
  4. Place the pot over medium heat and bring the mixture to a gentle simmer. Do not let it boil vigorously. Simmer for about 10 minutes to allow spices to infuse.
  5. Add the orange peel strips to the pot and let them cook for another 5 minutes to release essential oils.
  6. Turn off the heat. Stir in the fresh orange juice.
  7. Place a fine-mesh strainer over a large pitcher or serving jug. Pour the wassail through the strainer to remove all solid spices and peel. Discard solids.
  8. Ladle the warm cider into mugs and serve immediately.

Notes

Do not boil the mixture vigorously as it can make the apple juice taste flat. Add fresh orange juice at the end to preserve its bright flavor. If serving with alcohol (rum, bourbon, or brandy), add it after removing the pot from heat to prevent evaporation. The flavors improve if stored in the fridge overnight.
