Instructions

  1. Preheat the oven to 375°F (190°C). Place ramekins or baking dish on a small baking sheet.
  2. Make the apple filling: In a medium bowl, combine sliced apples, 2 tablespoons granulated sugar, 1 tablespoon flour, cinnamon, nutmeg, and lemon juice. Toss to coat evenly. Let sit while preparing topping.
  3. Make the oat topping: In a small bowl, combine rolled oats, ¼ cup flour, brown sugar, and a pinch of salt. Add cold butter cubes. Rub butter into dry ingredients with fingertips until mixture resembles coarse crumbs with some pea-sized butter pieces. Refrigerate while making caramel.
  4. Make the salted caramel: In a small saucepan over medium heat, spread ¼ cup granulated sugar in an even layer. Let melt without stirring, swirling pan occasionally, until deep amber color.
