A warm, spiced pumpkin chai latte made with steamed milk, pumpkin puree, and chai tea. This quick and easy recipe delivers a velvety, soul-soothing drink that tastes better than any coffee shop version.

Ingredients

Scale
  • 1 cup (240 ml) whole milk (or any milk of your choice)
  • 1 chai tea bag
  • 2 tablespoons (30 g) pumpkin puree (100% pure pumpkin)
  • 1 tablespoon (15 ml) maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice (plus extra for garnish)
  • Pinch of salt

Instructions

  1. Heat the milk. Pour 1 cup of milk into a small saucepan over medium-low heat. Warm until steaming but not boiling, about 3-4 minutes. Stir occasionally.
  2. Steep the chai. Remove the pot from heat and add the chai tea bag. Steep for 3-4 minutes. Remove the tea bag and squeeze gently.
  3. Whisk in the pumpkin. Add 2 tablespoons of pumpkin puree and whisk vigorously until smooth, about 30 seconds.
  4. Add the sweetener and spices. Stir in 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, 1/4 teaspoon pumpkin pie spice, and a pinch of salt. Whisk to combine. Taste and adjust if desired.
  5. Heat through. Return the saucepan to medium-low heat and warm for another 1-2 minutes, whisking occasionally. Do not boil.
  6. Froth the milk (optional). Pour the mixture into a mug and froth with a milk frother for 15-20 seconds. Alternatively, whisk vigorously or shake in a sealed jar.
  7. Garnish and serve. Sprinkle a pinch of pumpkin pie spice or cinnamon on top. Serve immediately.

Notes

Do not boil the milk to avoid scorching. Steep the chai off the heat to prevent bitterness. Whisk pumpkin in slowly to avoid clumps. Taste and adjust sweetness and spices to your preference. This drink is best served fresh.
