These Cozy Old-Fashioned Apple Dumplings with Cinnamon Sauce are the result of a messy, wonderful afternoon. They’re not fancy, they’re not trendy, they’re just good—the kind of good that makes you slow down and actually taste what you’re eating.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cut into small cubes
  • ½ cup ice water (plus more if needed)
  • 6 medium apples, peeled and cored (Honeycrisp or Granny Smith recommended)
  • ½ cup brown sugar, packed
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Make the pastry dough. In a large bowl, whisk together the flour and salt. Add the cold butter cubes and cut them into the flour using a pastry cutter or two forks until the mixture resembles coarse meal with some pea-sized butter pieces remaining. Drizzle in the ice water, one tablespoon at a time, and toss with a fork until the dough just comes together. It should look shaggy, not smooth. Turn it out onto a lightly floured surface, bring it together into a disk, wrap it in plastic wrap, and re…
  2. Prep the apples. While the dough chills, peel and core your apples. Keep them whole, using an apple corer or small knife to remove the core from the top, leaving the bottom intact to create a pocket for the filling.
  3. Make the filling. In a small bowl, mix together the brown sugar, softened butter, cinnamon, and nutmeg until it forms a paste. Spoon this mixture into the cavity of each apple, pressing it down gently without overstuffing.
  4. Roll out the pastry. On a lightly floured surface, roll the chilled dough into a large rectangle, about ¼-inch thick. Cut it into six equal squares, each large enough to wrap around one apple completely.
  5. Wrap the apples. Place one apple in the center of each pastry square. Bring the corners up to meet at the top of the apple and pinch the seams together to seal. Place the wrapped apples in a greased 9×13-inch baking dish, seam-side down. Refrigerate for 15 minutes while you preheat the oven to 375°F (190°C).
  6. Make the cinnamon sauce. In a small saucepan, combine the granulated sugar, butter, cinnamon, salt, and water. Bring to a boil over medium heat, stirring occasionally, then reduce the heat and let it simmer for 5 minutes. Remove from the heat and stir in the vanilla extract.
  7. Assemble and bake. Pour the warm cinnamon sauce over and around the dumplings in the baking dish. Brush the tops of the pastry with a little milk or cream for a golden finish. Bake for 40-45 minutes, until the pastry is golden brown and the sauce is bubbling. Halfway through, baste the dumplings with the sauce from the bottom of the dish.
  8. Rest and serve. Let the dumplings cool in the dish for 10 minutes before serving. Spoon some of the cinnamon sauce over each dumpling and serve warm.

Notes

Chill the wrapped dumplings for 15 minutes before baking to prevent the pastry from sliding off. Baste halfway through baking to keep the pastry moist. Use a glass baking dish for best visibility. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use cold vegan butter in the pastry and coconut oil in the sauce. The sauce can be made up to 3 days in advance and reheated. Unbaked dumplings can be frozen for up to 3 months.
