A comforting slow-cooker hot cocoa made with simple pantry staples, featuring a rich, smooth texture and topped with a homemade airy marshmallow whip.

Ingredients

Scale
  • 4 cups whole milk (or oat milk for dairy-free)
  • 1/2 cup unsweetened cocoa powder (Dutch-processed preferred)
  • 1/2 cup granulated sugar (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup heavy cream (for marshmallow whip)
  • 1 jar (7 oz) marshmallow fluff
  • 1 teaspoon vanilla extract (for marshmallow whip)
  • Mini marshmallows (for garnish)

Instructions

  1. Pour cold milk into a 3-4 quart slow cooker. Sprinkle in cocoa powder, sugar, and salt. Whisk thoroughly until smooth and no lumps remain.
  2. Stir in 1 teaspoon of vanilla extract.
  3. Cover and cook on Low for 2-3 hours, stirring occasionally, until hot and fragrant. Do not use High heat to prevent scorching.
  4. While cocoa cooks, chill a mixing bowl in the freezer for 10 minutes.
  5. In the chilled bowl, combine heavy cream, marshmallow fluff, and 1 teaspoon vanilla. Beat with a hand mixer on medium-high speed for 3-4 minutes until soft peaks form.
  6. Ladle the hot cocoa into mugs.
  7. Top each mug with a generous dollop of marshmallow whip and garnish with mini marshmallows.
  8. Serve immediately.

Notes

For best results, whisk cocoa into cold milk to prevent clumping. Keep the mixing bowl chilled for the marshmallow whip to ensure it holds peaks. If the cocoa thickens upon standing, thin with a splash of cold milk. The marshmallow whip is best made fresh but can be stored in the fridge for a few hours and re-whipped.
