A rich and tender slow cooker beef stew made with chuck roast, red wine, and root vegetables. This easy ‘set it and forget it’ recipe delivers deep, complex flavors and melt-in-your-mouth texture with minimal active prep time.

Ingredients

Scale
  • 3 lbs beef chuck roast, cut into 1.5-inch cubes
  • 2 tablespoons all-purpose flour
  • 2 tablespoons neutral oil (avocado or vegetable)
  • 2 large yellow onions, diced
  • 1 lb carrots, peeled and cut into chunks
  • 1.5 lbs red potatoes, halved
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup dry red wine (Cabernet Sauvignon, Merlot, or Pinot Noir)
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional, for thickening)

Instructions

  1. Pat beef chuck roast dry and cut into 1.5-inch cubes. Toss with flour, salt, and pepper until evenly coated.
  2. Heat oil in a large skillet over medium-high heat. Sear beef cubes in batches for 2-3 minutes per side until browned. Transfer to a plate.
  3. Reduce heat to medium. Sauté diced onions for 3-4 minutes until soft. Add garlic and tomato paste, stirring for 1 minute until fragrant.
  4. Transfer onion mixture to the slow cooker insert. Add browned beef, carrots, potatoes, thyme, rosemary, and bay leaves.
  5. Pour in red wine, beef broth, and Worcestershire sauce. Ensure liquid comes halfway up the ingredients.
  6. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until beef is fork-tender.
  7. Optional: Stir in cornstarch slurry during the last 30 minutes of cooking to thicken the stew.
  8. Remove bay leaves. Taste and adjust salt and pepper. Serve hot.

Notes

Do not skip searing the meat for better flavor. Avoid overcrowding the skillet when searing. If cooking on HIGH, check vegetables after 4 hours to prevent mushiness. Potatoes may become grainy if frozen, but are still edible. Use low-sodium broth to control salt levels.
