A one-pot comfort food dish that deconstructs classic lasagna into a creamy, hearty soup. Ready in under 45 minutes, it features tender pasta, rich tomato sauce, and pockets of creamy ricotta cheese.

Ingredients

Scale
  • 1 pound ground beef or Italian sausage (or a mix)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 28-ounce can crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups chicken or vegetable broth (low-sodium)
  • 8–10 lasagna noodles, broken into pieces
  • 15-ounce container whole milk ricotta cheese
  • 1/2 cup heavy cream (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Parmesan cheese for serving
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or stockpot over medium heat. Add diced onion and a pinch of salt; cook for 5-7 minutes until softened. Add minced garlic and cook for 1 more minute.
  2. Add ground beef or Italian sausage to the pot. Break it up with a wooden spoon and cook for 5-8 minutes until browned. Drain excess fat if necessary.
  3. Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, broth, oregano, basil, and red pepper flakes. Bring the mixture to a boil.
  4. Add broken lasagna noodles to the boiling soup. Stir well to prevent sticking. Reduce heat to medium-low and simmer uncovered for 10-12 minutes until pasta is tender.
  5. While soup simmers, whisk ricotta cheese, heavy cream (if using), half of the parmesan cheese, and a pinch of salt in a small bowl until smooth.
  6. Remove the pot from the heat. Slowly stir in the ricotta mixture. The residual heat will warm it through without curdling. Taste and adjust seasoning with salt and pepper.
  7. Ladle into bowls, top with remaining parmesan cheese and fresh basil leaves, and serve immediately.

Notes

[‘Do not boil the soup after adding the ricotta to prevent curdling.’, ‘Use room temperature ricotta to ensure smooth blending.’, ‘Lasagna noodles absorb liquid; add extra broth if storing or reheating.’, ‘For a vegetarian version, substitute meat with lentils or mushrooms.’, ‘Freezes well for up to 3 months.’]
