A comforting, quick chicken noodle soup featuring tender chicken, fresh vegetables, and a bright finish of fresh dill and lemon juice. Perfect for busy weeknights or when you need a warm hug in a bowl.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs and breasts
  • 1 large yellow onion, diced
  • 3 large carrots, peeled and sliced into half-moons
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 6 cups low-sodium chicken broth
  • 1 cup water (if needed for consistency)
  • 2 dried bay leaves
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • 1–2 teaspoons kosher salt (to taste)
  • 1/2 teaspoon freshly cracked black pepper
  • 8 ounces wide egg noodles
  • 1/4 cup fresh dill, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5 minutes until softened.
  2. Add minced garlic and dried thyme; stir for 1 minute until fragrant, being careful not to burn the garlic.
  3. Add chicken pieces, season lightly with salt and pepper, and brown for 2-3 minutes per side.
  4. Pour in chicken broth and water, scraping up browned bits. Add bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  5. Remove chicken from the pot and shred into bite-sized pieces using two forks.
  6. While chicken shreds, cook egg noodles in a separate pot of salted water according to package directions (7-8 minutes). Drain and rinse with cold water.
  7. Return shredded chicken to the soup pot. Add cooked noodles, fresh dill, and lemon juice. Stir and simmer for 2 minutes to heat through.
  8. Taste and adjust seasoning with salt and pepper. Serve immediately with crusty bread.

Notes

Cook noodles separately to prevent them from becoming soggy in leftovers. Use fresh dill for the best flavor. If using rotisserie chicken, add it in the last 5 minutes of cooking. Store noodles separately from the soup base when refrigerating or freezing.
