A comforting, easy-to-make meatloaf featuring a moist interior and a sweet, tangy brown sugar glaze. This recipe uses simple pantry staples and a milk-and-breadcrumb panade to ensure a tender, flavorful result perfect for weeknight dinners.

Ingredients

Scale
  • 1 lb 80/20 ground chuck
  • 1 cup plain dried breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment paper.
  2. Finely dice the onion and mince the garlic. Sauté the onion in butter until translucent, then let cool slightly.
  3. In a large mixing bowl, combine breadcrumbs and milk. Let sit for 5 minutes to form a panade.
  4. Add ground beef, eggs, sautéed onions, garlic, salt, pepper, Worcestershire sauce, and mustard to the bowl. Mix gently with hands until just combined; do not overmix.
  5. Shape the meat mixture into a loaf on the prepared pan or sheet.
  6. In a small bowl, whisk together ketchup, brown sugar, and mustard.
  7. Pour half of the glaze over the raw meatloaf. Bake for 45 minutes.
  8. Remove from oven, spread remaining glaze over the top, and bake for another 15-20 minutes until internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for at least 10 minutes before slicing to allow juices to redistribute.

Notes

Do not overmix the meat to avoid a tough texture. Ensure ingredients are at room temperature for better mixing. If the glaze browns too quickly, tent with foil. Leftovers taste better the next day as flavors meld.
