This classic peach cobbler features ripe, juicy peaches baked under a golden, buttery batter, served warm with vanilla ice cream. It’s a simple, foolproof dessert perfect for Labor Day gatherings or any summer celebration.

  • 1/2 cup granulated sugar (for peach filling)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon (optional)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar (divided: 1/2 cup for batter, 1/2 cup for topping)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon coarse sugar (like turbinado or demerara, optional)
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Place the rack in the middle position.
  2. Prepare the peaches: Bring a large pot of water to a boil. Score a small ‘X’ on the bottom of each peach. Drop peaches in boiling water for 30-45 seconds, then transfer to ice water. Peel and slice into 1/2-inch wedges.
  3. Make the peach filling: In a large bowl, combine sliced peaches, 1/2 cup sugar, lemon juice, vanilla extract, cornstarch, and cinnamon (if using). Stir gently and let sit while preparing batter.
  4. Melt the butter in the baking dish: Place 1/2 cup unsalted butter in a 9×13-inch dish and put it in the preheating oven until melted (about 5 minutes). Swirl to coat the bottom evenly.
  5. Mix the dry ingredients: In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  6. Add the milk: Pour 1 cup whole milk into the dry ingredients and whisk until just combined (a few lumps are fine). Batter will be thin.
  7. Assemble the cobbler: Pour the batter directly over the melted butter in the dish. Do NOT stir. Spoon the peach mixture evenly over the batter. Do NOT stir.
  8. Sprinkle the top: Sprinkle the remaining 1/2 cup sugar evenly over the peaches. Add coarse sugar if using.
  9. Bake: Place dish in the oven and bake for 40-45 minutes, until top is golden brown and filling is bubbly. If browning too quickly, tent with foil for last 10 minutes.
  10. Cool slightly: Let cobbler sit for 10-15 minutes before serving. Serve warm with a generous scoop of vanilla ice cream.

Notes

For best results, use ripe but firm peaches. The melted butter method creates a self-saucing batter—do not stir after adding batter or peaches. Let cobbler cool slightly before serving to allow filling to set. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, use melted coconut oil or vegan butter and oat milk or full-fat coconut milk.
