A one-pan nacho bar that lets you feed a crowd without spending the entire game in the kitchen. Build a giant sheet pan of nachos, bake until hot and melty, and serve with cold toppings on the side for a customizable, crowd-pleasing meal.

Ingredients

Scale
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded pepper jack cheese
  • 1 lb ground beef (80/20)
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup canned fire-roasted diced tomatoes, drained
  • 1 cup sour cream
  • 1 cup fresh pico de gallo or salsa
  • 1 avocado, diced
  • 1/2 cup pickled jalapeños, drained
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional: sliced black olives, diced red onion, hot sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven. Line your sheet pan with aluminum foil if desired.
  2. Cook the ground beef in a large skillet over medium-high heat until browned and cooked through, about 6-8 minutes. Drain excess fat if needed.
  3. Reduce heat to low. Sprinkle taco seasoning over the beef and add 1/4 cup water. Stir and simmer for 2-3 minutes until thickened. Remove from heat.
  4. Spread tortilla chips in an even layer on the prepared sheet pan.
  5. Sprinkle about half of the Mexican blend cheese and half of the pepper jack evenly over the chips.
  6. Spoon the seasoned ground beef evenly over the cheese layer. Scatter the drained black beans and fire-roasted tomatoes across the top.
  7. Sprinkle the remaining Mexican blend and pepper jack cheese over everything.
  8. Bake for 10-12 minutes until the cheese is fully melted and bubbly, and the edges of the chips are just starting to brown.
  9. Remove from the oven and let rest for 2 minutes.
  10. Arrange cold toppings (sour cream, pico de gallo, diced avocado, pickled jalapeños, cilantro, lime wedges) in small bowls.
  11. Place the sheet pan on a heat-safe surface in the center of the table. Serve immediately, letting everyone build their own nachos with the cold toppings.

Notes

For best results, use thick, sturdy restaurant-style tortilla chips. Drain beans and tomatoes well to prevent sogginess. Serve cold toppings on the side to keep chips crispy. Bake at high heat for a short time. Let rest 2 minutes before serving to allow cheese to set slightly.
