  • 1 gallon water (for brine)
  • 1 cup kosher salt
  • 1/2 cup pure maple syrup (for brine)
  • 1 tablespoon black peppercorns
  • 1 tablespoon bay leaves
  • 1 tablespoon allspice berries
  • 1 large apple, quartered
  • 2 cups apple cider
  • 1/4 cup pure maple syrup (for glaze)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons butter, softened
  • 4–5 fresh sage leaves, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. Prepare the brine by combining water, kosher salt, maple syrup, peppercorns, bay leaves, and allspice in a large stockpot. Heat over medium until dissolved, then cool completely.
  2. Submerge the turkey in the cooled brine in a large container or bag. Refrigerate for 12-24 hours.
  3. Remove turkey from brine, rinse thoroughly under cold water, and pat dry inside and out with paper towels.
  4. Place turkey on a rack in a roasting pan. Let sit at room temperature for 30-45 minutes. Stuff cavity with quartered apple.
  5. Preheat oven to 325°F (165°C). Roast turkey uncovered for 1 hour.
  6. Loosely tent breast with aluminum foil. Continue roasting for 1.5 to 2 hours until internal temperature reaches 165°F (74°C).
  7. During the last 30 minutes of roasting, combine apple cider and maple syrup in a saucepan. Simmer until reduced by half.
  8. Whisk Dijon mustard, butter, sage, and garlic into the reduced cider mixture to create the glaze.
  9. Remove turkey from oven when internal temp is around 155°F. Brush generously with glaze.
  10. Return to oven for 10-15 minutes until skin is golden and internal temp reaches 165°F.
  11. Rest turkey on a cutting board for at least 30 minutes before carving.

Ensure the turkey is completely thawed before brining. Dry the skin thoroughly before roasting for crispiness. Use a meat thermometer to check doneness; the thickest part of the thigh should reach 165°F. Resting the turkey for 30 minutes is crucial to retain juices.
