  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 1 tablespoon all-purpose flour
  • ½ cup whole milk
  • 2 tablespoons butter
  • 1 (4-ounce) can diced green chiles, drained
  • Pinch of cayenne pepper (optional, for heat)
  • 1 large bag restaurant-style tortilla chips
  • 1 cup sour cream
  • 1 cup fresh pico de gallo or salsa
  • ½ cup pickled jalapeños, drained
  • ½ cup black olives, sliced
  • ½ cup fresh cilantro, chopped
  • 1 avocado, sliced
  • ½ cup canned black beans, drained and rinsed (optional)

Instructions

  1. Cook the seasoned beef: Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a spatula. Cook for 6-8 minutes until browned and no longer pink. Drain off any excess fat, leaving about a tablespoon in the pan. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir to coat the beef evenly. Pour in the water and let it simmer for 2-3 minutes until the liquid thickens slightly. Set aside and keep warm.
  2. Make the queso: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute, stirring constantly. Slowly pour in the milk while whisking. Keep whisking until the mixture thickens, about 2-3 minutes. Reduce the heat to low. Add the shredded cheddar cheese a handful at a time, whisking until fully melted before adding more. Stir in the drained green chiles and cayenne if using. Keep warm on the lowest heat.
  3. Prepare the toppings: While the beef and queso cook, set out small bowls. Fill one with sour cream, one with pico de gallo, one with pickled jalapeños, and one with sliced black olives. Slice the avocado just before serving. Chop the cilantro.
  4. Assemble the board: Take a large board or sheet pan. Arrange the tortilla chips in a football shape—a wide oval that tapers slightly at both ends. Leave a small well in the center for the beef and queso.
  5. Add the warm ingredients: Spoon the seasoned beef into the center of the chip oval, spreading it out slightly. Pour the warm queso over the beef, letting it drip onto the surrounding chips.
  6. Add the cold toppings: Place the bowls of sour cream, pico, jalapeños, and olives around the edges of the board. Scatter a few jalapeños and olives directly over the queso. Fan out the avocado slices near the top of the football shape. Sprinkle the chopped cilantro over everything.
  7. Serve immediately: This board is best enjoyed within 15 minutes of assembly.
