  • 4 medium apples (about 2 pounds / 900 g), peeled and sliced (mix of Granny Smith and Honeycrisp)
  • 2 tablespoons (30 g) unsalted butter, melted
  • 2 tablespoons (25 g) brown sugar, packed
  • 1 tablespoon (8 g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup (90 g) old-fashioned rolled oats
  • 1/2 cup (60 g) all-purpose flour
  • 1/2 cup (100 g) brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons (85 g) unsalted butter, cold and cut into small cubes

Instructions

  1. Make the Salted Caramel Sauce: Place the granulated sugar in a medium saucepan over medium heat. Do not stir. After about 3 minutes, the edges will start to melt and turn amber. Gently swirl the pan to encourage even melting. Once the sugar is fully melted and a deep amber color (about 6-8 minutes total), remove from heat immediately.   2. Prep the Apples: Preheat oven to 375°F (190°C). In a large bowl, toss the sliced apples with melted butter, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Let sit for 5 minutes.
  3. Make the Oat Crumble: In a medium bowl, whisk together oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and use a pastry cutter, fork, or fingertips to work the butter into the dry ingredients until the mixture looks like coarse meal with some pea-sized butter chunks. Refrigerate while assembling the filling.
  4. Assemble the Crisp: Pour the apple mixture into a greased 9×9-inch baking dish and spread evenly. Drizzle about 1/2 cup of the salted caramel sauce over the apples. Sprinkle the oat crumble evenly over the top without pressing down.
  5. Bake: Place the dish on a baking sheet. Bake for 35-40 minutes, until the filling is bubbling around the edges and the topping is golden brown. If the crumble is browning too quickly, tent loosely with foil for the last 10 minutes. Let cool on a wire rack for at least 15 minutes before serving.
