Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder (Dutch-processed preferred)
  • 1/2 cup (65g) all-purpose flour, spooned and leveled
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (56g) unsalted butter, softened (for frosting)
  • 1 cup (120g) powdered sugar, sifted if clumpy
  • 2 tablespoons unsweetened cocoa powder
  • 23 tablespoons heavy cream or whole milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • White icing or white candy melts (for laces)

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 24-cup mini muffin pan generously with non-stick cooking spray.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract; whisk vigorously for about 30 seconds until glossy and slightly thickened.
  3. Sift cocoa powder, flour, baking powder, and salt into the wet ingredients. Fold with a rubber spatula until just combined (a few streaks of flour are fine). Do not overmix.
  4. Using a cookie scoop or small spoon, fill each mini muffin cup about 3/4 full. Bake for 10–12 minutes, until edges are set and tops look dry and crackly. A toothpick inserted in the center should come out with a few moist crumbs.
  5. Let brownie bites cool in the pan for 5 minutes, then transfer to a cooling rack. Cool completely before frosting.
  6. For the frosting: In a medium bowl, beat softened butter until smooth. Add powdered sugar, cocoa powder, 2 tablespoons heavy cream, vanilla extract, and a pinch of salt. Stir until combined, then whisk for 1–2 minutes until light and fluffy. Add more cream if needed.
  7. Transfer frosting to a piping bag fitted with a small round tip (or a zip-top bag with corner snipped). Pipe a small dollop onto each cooled brownie bite and spread into an oval shape.
  8. Melt white candy melts or prepare white icing. Transfer to another piping bag or zip-top bag. Pipe two parallel lines down the center of each frosted brownie bite, then 3–4 short crosswise lines between them to create laces.
  9. Let icing set for 10–15 minutes before serving. Serve at room temperature.

Notes

Don’t overbake; brownies continue to cook from residual heat. Use room temperature eggs to prevent butter from seizing. Chill frosting if too soft to pipe. Practice piping laces on wax paper first. Brownie bites can be baked a day ahead and stored in an airtight container; frost the day of serving.
