A rustic, easy-to-make dessert that combines a tender cake-like batter with a rich, gooey pecan filling. This cobbler eliminates the stress of pie crusts while delivering sophisticated, comforting flavors.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 3 large eggs, room temperature
  • 1/2 teaspoon salt
  • 2 cups pecan halves

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk and melted butter until combined.
  4. Pour wet ingredients into dry ingredients and stir until just combined to form a thick batter.
  5. Pour batter into the prepared baking dish and set aside.
  6. In a large bowl, whisk eggs until light and frothy.
  7. Add corn syrup, brown sugar, vanilla, and salt to the eggs; whisk vigorously until smooth and sugar is dissolved.
  8. Slowly pour the syrup mixture over the batter in the baking dish. Do not stir.
  9. Sprinkle pecan halves evenly over the top.
  10. Bake for 45-50 minutes until the top is golden brown and the filling is set but jiggles slightly in the center.
  11. Let cool for at least 20 minutes before serving to allow the filling to set.

Notes

Use room temperature eggs to ensure a smooth emulsion. Do not overmix the batter to keep it tender. Let the cobbler rest for 20 minutes after baking to prevent a runny texture. For a crispier top, toast pecans before adding. Line the oven rack with a baking sheet to catch any syrup drips.
