  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • ½ cup ranch dressing
  • ½ cup Buffalo wing sauce
  • ½ cup crumbled blue cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Prep your chicken: If using rotisserie chicken, remove skin and bones, then shred with two forks. If starting from raw, poach 2 boneless, skinless chicken breasts in simmering water for 12-15 minutes until cooked through, then shred.
  2. Soften the cream cheese: Take cream cheese out of fridge 20-30 minutes before starting, or microwave on low power for 10-15 seconds until soft but not melted.
  3. Combine the base: In a medium saucepan over medium-low heat, add softened cream cheese, ranch dressing, and Buffalo wing sauce. Stir constantly until cream cheese is fully melted and mixture is smooth and glossy, about 2-3 minutes.
  4. Add the cheeses: Stir in shredded mozzarella and cheddar cheese. Keep stirring until fully melted and mixture is thick and creamy, about 2 minutes.
  5. Fold in the chicken and blue cheese: Add shredded chicken and half of the crumbled blue cheese. Stir gently until evenly distributed.
  6. Season and finish: Taste and add a pinch of salt and pepper if needed. Stir in most of the sliced green onions, reserving a few for garnish.
  7. Serve immediately: Transfer to a serving bowl, top with remaining blue cheese crumbles and green onions, and serve hot with chips, celery sticks, carrot sticks, or crusty bread.

Notes

For a thicker dip, let it rest for 5 minutes after cooking. Low and slow heat prevents dairy from separating. Soften cream cheese to avoid lumps. Adjust heat by varying Buffalo wing sauce amount. Can be made ahead and reheated.
