  • 1 large round sourdough bread loaf (about 89 inches in diameter)
  • 1 large oval bread loaf (like ciabatta or French boule)
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 2 cups cooked, shredded chicken (from 1 medium rotisserie chicken)
  • 8 ounces cream cheese, softened
  • ½ cup buffalo wing sauce (such as Frank’s RedHot Original)
  • ½ cup ranch dressing
  • 1 cup shredded sharp cheddar cheese, divided
  • ½ cup shredded Monterey Jack cheese
  • 2 green onions, thinly sliced
  • Salt and black pepper to taste
  • Optional: extra buffalo sauce for drizzling
  • Optional: fresh parsley, chopped
  • Optional: celery sticks and carrot sticks for dipping

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  2. Using a serrated knife, cut a 1½-inch thick slice off the top of the round sourdough loaf. Set aside. Hollow out the bottom half, leaving a ½-inch thick wall. Save removed bread for dipping.
  3. From the oval loaf, cut a 1-inch thick slice from one end to form the face mask. Attach it to the front of the round loaf with toothpicks to create a helmet shape.
  4. In a small bowl, mix melted butter, garlic powder, and smoked paprika. Brush half inside the hollowed bread bowl and the rest over the outside of the helmet shape and top slice.
  5. Place bread bowl and top slice on baking sheet. Bake for 10 minutes until lightly toasted and golden.
  6. Meanwhile, in a large skillet over medium heat, combine softened cream cheese, buffalo wing sauce, and ranch dressing. Stir until smooth, about 3-4 minutes.
  7. Add shredded chicken, ½ cup cheddar cheese, and Monterey Jack cheese. Stir until combined and cheese is melted. Season with black pepper. Remove from heat.
  8. Remove pre-toasted bread from oven. Spoon buffalo chicken dip into the hollowed bread bowl. Sprinkle remaining ½ cup cheddar cheese on top. Place top slice back on at a slight angle.
  9. Return assembled helmet to oven. Bake for 20-25 minutes until dip is bubbly and cheese is melted and golden. Tent with foil if browning too quickly.
  10. Let rest for 5 minutes. Garnish with green onions and optional extra buffalo sauce. Serve with celery sticks, carrot sticks, and reserved toasted bread pieces.

Notes

Pre-toasting the bread is crucial to prevent sogginess. Use room temperature cream cheese for a smooth dip. Shred cheese from a block for best melting. Let dip rest 5 minutes after baking before serving. Make dip up to 2 days ahead and refrigerate; add 5-10 minutes to baking time if starting cold.
